How many calories are in a bratwurst in a roll?
A grilled bratwurst of about 120 g in a white bread roll comes to about 410 kcal, plus about 10 for a squeeze of mustard. The sausage is 240 of that and the roll 170. A coarse, fattier bratwurst takes the same roll to about 560.

The plate, as served
One grilled Thuringian-style bratwurst of about 120 g in a 60 g white roll. Mustard, about 10 kcal (BLS R132000), not counted.

Where each number comes from
Composition tables list ingredients, not dinners. There is no row anywhere for this plate, so it is built from its parts, and the preparation assumed for each part is written next to it, because that assumption is usually worth more calories than the ingredient.

Why you will see 444 to 958 kcal quoted for this
The sources disagree more here than for any other dish on this site. A Thuringian figure of 444 kcal assumes a 70 g roll and 100 g of sausage. fddb lists a snack-bar bratwurst in a roll with mustard at 958 kcal for 197 g, which implies a far fattier sausage. BLS separates the two: a Rostbratwurst grilled is 201 kcal per 100 g, a coarse bratwurst grilled 325. Ours sits just below the low figure because the roll here is 60 g and the sausage is the lean kind.
Which is why this page shows the sum instead of asserting a total. Build the plate you actually eat and the number is yours rather than an average of strangers.
