A Leberkässemmel, a thick slice of warm Leberkäse in a white roll with sweet mustard, comes to about 545 kcal. The Leberkäse is 340 of that, the roll 170 and the mustard 35. Bavaria calls the roll a Semmel; elsewhere the same thing is a Leberkäsesemmel or Leberkäsebrötchen.

Where each number comes from
Composition tables list ingredients, not dinners. There is no row anywhere for this plate, so it is built from its parts, and the preparation assumed for each part is written next to it, because that assumption is usually worth more calories than the ingredient.

| Leberkäse | One thick slice, about 120 gBLS W233062 (Fleischkäse einfach, fein/Original Bayerischer Leberkäse fein, gebraten ohne Fett (Ofen)). Bavarian Leberkäse baked in the oven, no fat added. The Bavarian kind contains no liver, despite the name. | 340 |
| Bread roll (Brötchen) | One white roll, about 60 gBLS B511000 (Weizenbrötchen). Plain wheat roll, the Brötchen or Semmel of every snack bar and butcher counter. | 170 |
| Sweet mustard | Two teaspoons, about 20 gBLS R135000 (Senf süß). Bavarian sweet mustard. Medium-hot mustard is 111 kcal per 100 g against 177 (BLS R132000). | 35 |

Why you will see 515 to 700 kcal quoted for this
fddb averages Leberkäse rolls at 257 kcal per 100 g, about 515 for a 200 g roll. A butcher's version is put at 350 per 100 g, which would be 700 for the same weight. The difference is how much Leberkäse is in the roll and how fatty it is. BLS has 283 kcal per 100 g for oven-baked Bavarian Leberkäse.
Which is why this page shows the sum instead of asserting a total. Build the plate you actually eat and the number is yours rather than an average of strangers.
