Dürüm calories, from the yufka inwards

A dürüm, döner meat rolled in a thin yufka sheet with salad and yoghurt sauce, comes to about 665 kcal. The yufka is 265 of that, 35 less than the flatbread of a döner kebab. Ask for fries inside, which many shops offer, and it is about 1,070.

Figures are the sum of the household portions listed in the composition table, rounded to the nearest 5 kcal per component.

Where each number comes from

Composition tables list ingredients, not dinners. There is no row anywhere for this plate, so it is built from its parts, and the preparation assumed for each part is written next to it, because that assumption is usually worth more calories than the ingredient.

Dürüm: components, portions, calories and sources
ComponentPortion and preparationkcal
Döner meat, veal and beefA snack-bar portion, about 130 gBLS U030172 (Kalb Hackfleisch, gegrillt). German Döner spits are usually part minced meat. BLS has no Döner row for veal or beef, so grilled veal mince, the closest match, is used.335
Yufka wrapOne large sheet, about 90 gBLS B783012 (Weizentortilla). BLS has no yufka row; the wheat tortilla is the closest flatbread of the same build, flour, water and a little fat, and is used here.265
Yoghurt garlic sauceTwo squirts, about 50 gBLS X3A9010 (Joghurt-Dip). The yoghurt-based herb or garlic sauce. A mayonnaise-based sauce is roughly three times as much per spoonful (BLS R148600).45
Döner saladA handful, about 80 gBLS X201160 (Gemischter Salat ohne Salatmarinade). Lettuce, cabbage, tomato and onion with no dressing. BLS row for a mixed salad without marinade.20

Why you will see 524 to 900 kcal quoted for this

fddb lists 524 to 665 kcal, and averages yufka wraps at 175 kcal per 100 g, which makes a 350 g dürüm about 613. Bodystriker puts it at 700 to 900. The high figures usually mean more meat, a mayonnaise sauce, or fries rolled in.

Which is why this page shows the sum instead of asserting a total. Build the plate you actually eat and the number is yours rather than an average of strangers.

Common questions

How many calories are in a dürüm?
About 665 kcal with 130 g of veal and beef, salad and yoghurt sauce. With fries inside it is about 1,070.
Dürüm or döner in bread, which has fewer calories?
The dürüm, by about 35 kcal. The difference is the bread: a 90 g yufka sheet against a quarter of a flatbread.
What is yufka?
A thin Turkish flatbread of wheat flour, water and a little fat, close to a large wheat tortilla. The German food table has no row for yufka, so this page uses the tortilla.
How do I make a dürüm lighter?
Skip the fries inside, which are 405 kcal. Keep the yoghurt sauce, which is 45.
